Smoked Salmon Appetizer Bites

Every year when summer finally rolls around I really get into seafood. Don’t get me wrong…I love seafood all year long, but there’s something about warm weather that enhances my desire to eat more of it.

In an effort to come up with new seafood recipes, I just so happened to strike up a conversation with the butcher at the grocery store one day about what to make with smoked salmon. {For the record when you are in sales you tend to be able to have a conversation about anything with anyone.} He suggested pairing it with some gouda cheese, then I decided to get creative and add a few touches of my own.

Smoked Salmon Appetizer Bites

Ingredients:

  • 4 ounces of Smoked Salmon cut into bite-sized pieces
  • Gouda cheese slices, about 6-8 ounces
  • Whipped Cream Cheese spread, about 4-6 ounces
  • 1/3 cup of freshly crushed blueberries & strawberries
  • Sliced Cucumbers (1-2 cucumbers) and/or Bagel Chips
  • Fresh dill for garnish

Directions:

  1. Place thin slice of gouda cheese on top of cucumber slice or bagel chip. Then top with cream cheese.
  2. Add smoked salmon and drizzle with crushed blueberries or strawberries. Top with small sprig of fresh dill.

That butcher really knows his stuff! But, I have to say the crushed blueberries and strawberries add a nice summery touch to the recipe too.

This appetizer is perfect for your next party, or for a relaxing evening at home paired with a great wine.
