Smoked Salmon Appetizer Bites

Every year when summer finally rolls around I really get into seafood. Don’t get me wrong…I love seafood all year long, but¬†there’s something about¬†warm weather¬†that enhances my desire to eat more of it.

In an effort to come up with new seafood recipes, I just so happened to strike up a conversation with the butcher at the grocery store one day about what to make with smoked salmon. {For the record when you are in sales you tend to be able to have a conversation about anything with anyone.} He suggested pairing it with some gouda cheese, then I decided to get creative and add a few touches of my own.

And¬†we {we meaning IU that is}¬†also signed¬†a much needed recruit. It was a great weekend for basketball…and the¬†fun continues tonight with the NCAA Men’s Basketball Championship game.

A Super Bowl Story & Recipe


Super Bowl weekend has held a special place in my heart since the year¬†2012. For those of you that may not remember, Indianapolis hosted the Super Bowl that year. I didn’t actually go to the game {unfortunately, I’m not made of money…yet :)}, but I spent Super Bowl weekend attending¬†the¬†festivities in Indianapolis.

To date this¬†is¬†definitely one of the coolest experiences I have ever had…and I’m not even a big NFL fan.

So in honor of Super Bowl weekend, I thought it would be¬†fitting to share a little bit of my experience with you…oh and of course¬†I also have¬†a yummy, skinny buffalo chicken dip recipe I’ll share in this post too!
