Now that we have made it through Easter we have a new holiday to look forward to…Cinco de Mayo! Being the Mexican food lover that I am, of course I enjoy this holiday! Any excuse to spend the day eating chips and salsa and drinking margaritas is a good day in my book.
In today’s recipe segment, Danielle is sharing a few low-cal Cinco de Mayo recipes that you can indulge in guilt-free π
I have to admit I wasn’t much of a guacamole person until last year. I tend to eat like a child at times…and if something has chopped onions in it I won’t touch it. But, I wasn’t really able to taste the onions in most guacamole recipes. Typically, red onions seem to be used in guacamole and they taste better to me than chopped white onions…that is if I “have-to” have onions. Once I came to this realization I became a guacamole fan! Plus, you can leave the onions out like Danielle did in this recipe and it still tastes just as good.
I think Danielle and I both were pleasantly surprised on how good these eggs tasted! The avocado on top is a nice complement, and looks super cute too!
Lastly, you can’t celebrate Cinco de Mayo without drinking one, two, three, four (oh who’s counting on a holiday anyways)….margaritas!!
At least if you drink several of these on Cinco de Mayo they are low-cal. I call that a win-win π
